Dig herb roots

After a good killing frost and the week  or so around the New Moon is the best time to get out and dig burdock/yellow dock/dandelion/chicory/mallow and whatever other roots you need to harvest. After thekilling frost makes the leaves die back, all the properties of the plant are now stored below ground in the root. It is best  to wash them, dry thoroughly and chop them while still fresh as some get VERY hard after drying. When absolutely dry, store in airtight containers
