Like many religiously based common holidays, the admonition to eat fried foods today was meant to have people clean out their winter larders and not let anything spoil and use up old rancid fats. so whatever you can find to fry--do it today--and add herbs to it!! Baked veggies from the root cellar with oil, salt, pepper and herbs sprinkled on are a wonderful meal in themselves--so are savory/herbed flavored doughnuts!
